Feeding people is the perfect way to walk out our faith and share the love of God and family. There is nothing more welcoming than time around the table. There is no greater way to reach a hungry person, than to feed them. Is there someone who attends your church that eats alone? What a tribute to our Master it would be to invite them to Sunday dinner, even if you've never spoken to them before. How wonderful would it be if we PLANNED to invite a lonely person to dinner on Sunday. With just a little effort we can share the love of God easily.
Here's a quick, easy recipe to get you started. This is one of my husbands favorites. I love to do this because it’s SO simple, yummy and good for your body. From this light delicious sauce you can add most anything…
Let’s get started!
In a big pot, put your pasta water on to boil; Must be a rolling boil. Add a tbsp of salt.
In another large pan, add Extra Virgin olive oil, twice around the pan. Add to this oil, 2 cloves of garlic crushed and chopped. Turn the heat to medium and wait for the sizzle (the house will really smell yummy).
Add 4 large tomatoes or a nice sized container of cherry tomatoes or Campari tomatoes sliced, flesh side down.
Hopefully, by now, you’ll be able to “drop your pasta” (put the macaroni in the water).
Put the lid on the pan and let the tomatoes melt. Once they’re soft you can squish them with the back of your spoon or spatula. Add 1/2 tsp. salt, 1/4 tsp. pepper. Let them cook 1 or two minutes longer, until they become a chunky sauce.
At this point, if you’d like to add fresh basil… go to town!!!
Drain your pasta, but first take one ladle full of pasta water, and add it to your sauce. It will make your sauce nice and smooth and even more yummy!
Toss pasta in your sauce. Go ahead! Add it right on in there. Top it with a good handful of fresh basil if you want. Serve with Parmesan cheese for your family to add on their own, or, my favorite, Pecorino Romano. Mmm!
